Tea is often served in courses and the second course is usually a selection of savory tea sandwiches. These are also called finger sandwiches and make a popular food item at bridal showers, luncheons, baby showers, and birthday parties. Here are some varieties you can try! It's best to choose a variety of breads to make your platter look the most appealing. Cut the sandwiches diagonally in half or even twice for small triangles and make sure you remove the crust!

- Salmon and cream cheese on rye bread with fresh dill.

- Pimento cheese on white.

- Chicken salad on whole wheat.

- Cucumber, cream cheese, and fresh herbs on white.

- Egg salad and fresh watercress on pumpernickel.

CLASSIC EGG SALAD RECIPE

8 hard-boiled eggs, peeled and roughly chopped

2/3 cup mayonnaise

1/2 cup finely diced celery

1/4 cup finely chopped chives

2 tbsp minced red onion

1 tsp freshly ground pepper

1 tsp salt

Fresh watercress

Stir together eggs, mayo, celery, chives, onion, pepper and salt. Spread on bread and layer with fresh watercress.
