Cupcakes are a classic party staple for a reason...they are delicious! There are more recipes for them on the internet than stars in the sky but we feel like you need one good, solid recipe that you can adapt and make your own. Today, we are sharing our simple yellow cupcakes with buttercream frosting. We used them at our recent flamingo party and they were a hit.

You can easily add different flavorings and ingredients to either the icing or the batter to make cupcakes that are uniquely yours. Enjoy and happy baking!

BUTTERCREAM FROSTING

  • 1 stick butter, room temperature
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 1-2 tbsp milk

Combine all ingredients in the bowl of a stand mixer except milk. Beat on low until combined then beat on high. Add milk gradually until you reach the desired frosting consistency.

 

BASIC YELLOW CUPCAKES

  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 cup butter, softened
  • 2 tsp baking powder
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup milk
  • 1 tsp vanilla

Preheat oven to 375F and line muffin tin with cups. Cream butter and sugar together until fluffy. Beat in eggs. Add flour, baking powder, and salt. Add milk and vanilla. Beat thoroughly. Bake for 16-18 minutes.
