These cupcakes with icing were inspired by our Lavender Fields design. This is one of our favorite designs for summer and for painting at an outside party. The smell of the lavender coupled with the taste of it in the cupcakes will have you so relaxed, you might not be able to hold your paintbrush!
 
Lemon Cupcakes:
*makes approximately 30 cupcakes
  • 3 cups self rising flour
  • 1/2 teaspoon salt
  • 2 cups white sugar
  • 2 tablespoons of freshly grated lemon zest
  • 1/4 cup freshly squeezed lemon juice
  • 1 cups unsalted butter at room temperature
  • 4 medium eggs at room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup whole milk
  1. Preheat oven to 375*F.
  2. Sift flour and salt into a large bowl.
  3. In another large bowl, beat butter and sugar with an electric mixer until light and fluffy. Add eggs one at a time. Add vanilla extract and lemon zest.
  4. Add flour and salt mixture to the butter and sugar mixture gradually. Add approximately 1/3 flour mixture, 1/3 lemon juice, 1/3 whole milk and mix. Repeat until all flour, lemon juice, and milk has been incorporated. Do not overmix.
  5. Fill cupcake liners and bake until a toothpick inserted in the center comes out clean. Approximately 15-20 minutes. Allow cupcakes to cool in the pans for 10 minutes and then remove and allow to cool on rack.
Lavender Buttercream Icing:
*enough to ice approximately 30 cupcakes
  • 5-1/2 cups confectioner's sugar
  • 1-1/2 cups unsalted butter at room temperature
  • 1-1/2 teaspoons vanilla extract
  • 3 drops lavender essential oil
  • 1 tablespoon crushed dried lavender
  • optional: red and blue food coloring
  1. In a standing mixer with whisk attachment: add sugar gradually to the butter. Mix on low until all sugar is incorporated. Mix on a medium speed for 3 minutes to make the icing light and fluffy.
  2. Add vanilla extract and lavender essential oil to the buttercream icing.
  3. In a separate bowl lightly crush the dried lavender. Add to icing mixture.
  4. Optional: add blue and red food coloring until the shade of purple you desire is reached.
